It’s so versatile.
Spring Pea Pasta Salad
Pasta salad is one of our favorite spring and summer dishes. This recipe from Feasting at Home adds spring peas, lemon, and mint to the mix. The ingredients add pops of color to this stunning dish. It’s easy to put together and you can even add goat cheese to bring in even more flavor. Yum!
Blueberry Oatmeal Breakfast Cake
You might be wondering how we included a recipe with “cake” in the title, but we promise it’s tasty and healthy. This oatmeal-meets-muffin recipe is great for a quick breakfast or as a healthy treat during the day. The recipe from Eating Well does have a lot of prep time, but as our team member noted, you can make these breakfast cakes on the weekend and enjoy them during the week.
